I’m in my egg bite era lately. After perfecting my Starbucks Copycat Potato, Cheddar & Chia Bakes, I had to make a lighter, high-protein version; and these red pepper and feta ones hit the spot.

I set out to make a simple, healthy breakfast that would actually keep me full… and somehow ended up eating three before I even packed them for the week. Yep, these Red Pepper & Feta Egg White Bites are that good. Fluffy, savory, and just the right amount of tang from the feta, they’re like mini omelets you can grab on the go. Trust me, you’ll want to make a double batch.

Ingredients

  • 2 cups egg whites (about 16 large egg whites or one 16-oz carton)
  • ½ cup full-fat cottage cheese
  • ½ cup crumbled feta cheese
  • ½ cup finely diced red bell pepper
  • ¾ cup diced ham steak (about 3–4 oz, trimmed and diced)
  • 1 small garlic clove, minced
  • ¼ tsp salt (reduce slightly if your feta or ham is salty)
  • ¼ tsp black pepper
  • Pinch of red pepper flakes for a little kick (optional)

How to make it

Step one: Preheat oven to 350°F. Lightly butter the bottom and sides of a 12-cup muffin pan.

Step two: In a nonstick pan, lightly sauté the diced red pepper, ham, and minced garlic over medium heat for 2–3 minutes, just until fragrant and the peppers begin to soften. Remove from heat and let cool slightly.

Step three: In a blender, combine egg whites, cottage cheese, salt, and pepper. Blend 10–15 seconds until smooth and slightly frothy, don’t over-blend.

Step four: Stir in feta, sautéed red pepper, ham, and garlic.

Step five: Evenly pour the mixture into the prepared muffin pan (about ¾ full). Bake 20–25 minutes, until set in the center and lightly golden.

Step six: Let rest 2–3 minutes, then transfer to a paper-towel-lined plate to absorb any tiny bit of moisture underneath.

How to Store & Reheat

Fridge: Store in an airtight container for up to 4 days.
Freeze: Cool completely, freeze on a baking sheet until solid, then store in a freezer bag up to 2 months.
Reheat:

  • From fridge: Microwave 20–30 seconds.
  • From frozen: Microwave 45–60 seconds (cover with a damp paper towel).
  • Oven or air fryer: 300°F for 5-8 minutes.
