The Easiest, Tastiest Breakfast Tacos

Are you ready to jazz up your morning routine? Say hello to these Quick and Easy Breakfast Tacos! With creamy scrambled eggs, tangy feta cheese, buttery avocado, and a kick of hot sauce all wrapped up in soft corn tortillas, these tacos are the ultimate way to start your day right. And the best part? They come together in less than 15 minutes.

I first got hooked on these fabulous tacos at a restaurant in Durham, NC and I couldn’t believe how something so simple, could be so addictive!

So of course I hyperfixated and ordered them several times in the weeks, until I learned how to make them (so easy!). Then I ate them over and over at home.

Soft scrabbled eggs – The fluffy, soft scrambled eggs is what makes these. I was never one for soft scrambled eggs, but they are absolutely necessary here.

Feta cheese – The original inspiration for these tacos comes with queso fresco. I only had feta when I first tried them and it was so good that it stuck. Feel free to give them a try with quest fresco if you prefer.


Ingredients:

  • 4 large eggs
  • 1/4 cup feta cheese, crumbled
  • 4 soft corn tortillas
  • 1/2 ripe avocado, sliced
  • 4 tbsp sour cream
  • Your favorite hot sauce
  • Salt and pepper, to taste
  • 1 tablespoon butter or avocado oil (for scrambling eggs)

How to make it

Step 1 Scramble Those Eggs:
Grab a skillet and heat it over medium heat. Add a tablespoon of butter or avocado oil. While the skillet is heating up, crack those eggs into a bowl, add a pinch of salt and pepper, and give them a good whisk. Pour the eggs into the skillet and stir gently until they’re soft and fluffy. (Pro tip: Low and slow wins the scramble game!)

Step 2 Warm Up the Tortillas:
While the eggs are cooking, warm up your corn tortillas. You can do this by heating them in a dry skillet for about 30 seconds on each side. You could also wrap them in a damp paper towel and microwave for 30 seconds. 

Step 3 Assemble the Tacos:
Now for the fun part! Lay your warm tortillas flat and divide the scrambled eggs evenly among them. Top each with a generous sprinkle of feta cheese (we’re going for that tangy goodness).

Step 4 Avocado Time:
Slice up that ripe avocado and place a few slices on top of each taco. Creamy, dreamy, and oh-so-good.

Step 5 Add Some Heat:
Drizzle your favorite hot sauce over the top. Go as mild or wild as you like—this is your breakfast fiesta!

Step 6 Serve and Enjoy:
Fold the tacos in half, grab your favorite coffee and dig in.


Notes & Tips:

  • Customize It: Feel free to add extras like crispy bacon, sautéed veggies, or a squeeze of lime for an extra zing.
  • Make It Veggie-Friendly: Throw in some black beans or sautéed spinach for a plant-powered twist.
  • On-the-Go: Wrap these babies in foil if you’re in a rush. They make a perfect grab-and-go breakfast!
  • Mix it up: One of my favorite things is to mix sour cream with plenty of hot sauce to dip just about anything in. This spicy sour cream mix would be excellent drizzled over breakfast tacos.
  • Make it pop: Top with cilantro and a squeeze of lime for a little “pop” of flavor
